VEGGIE SAUSAGE ROLLS

INGREDIENTS

6 sheets puff pastry

2 cans of chickpeas

2 eggs (for batter)

1 egg, whisked (to coat pastry)

1 zucchini, grated

1 carrot, grated

1 spring onion, finely chopped

100g feta

1 tbsp cumin

1 tbsp mixed herbs

Salt & pepper

Sesame seeds

 

Method

Preheat the oven to 200° C fan forced

Blend chickpeas and eggs together until well combined

Fold through grated carrot, zucchini and spring onion

Add crumbled feta and spices. Mix everything well until nicely combined

Spoon the mixture onto the pastry before rolling into a sausage-like shape

Brush the pastry with whisked egg and sprinkle sesame seeds on top. Cut to desired size and cook in the oven for 20 minutes, or until golden brown

Serve with tomato sauce and Japanese mayonnaise
